St. Angela’s College Host Food Product Innovation Day
ST ANGELA’S College, Sligo recently hosted the Food Product Innovation Day for the B. Applied Science in Nutrition, Food and Business Management course. Final year student Chloe Coen won the Best New Food Product Award for her ‘Little Jaws’ Gluten Free, Egg Free and Dairy Free Fish Nuggets. Brid Torrades, Owner Ósta Café, Sligo was the guest judge on the day and presented Chloe with the Certificate for Best Food Product Innovation 2016 and her prize.
The Food Innovation and New Product Development module studied in year 4 of the B. Applied Science Food and Business Management degree programme focusses on developing innovative, healthy, value added food products over a 10 week period in the food laboratories in St. Angela’s College. Roisin Lydon, lecturer on the B. Applied Science in Nutrition, Food and Business Management course comments, “Innovation is important now more than ever to meet the ever growing demands of today’s health conscious consumer.” The students conduct sensory trials, market research and also develop a marketing plan for the product. At the end of the 10 weeks the students present their final products including packaging, labelling, costings and their marketing plans. Ms Lydon continues, “This module develops students’ autonomous ability to think creatively, reflect and carry out evidence-based research in order to design and develop innovative, healthy food products.” RUTH completed her 4-year Bachelor of Applied Science in Nutrition, Food and Business Management (level 8 honour’s degree) in St. Angela’s College Sligo and graduated in November 2017. Since graduating, Ruth has secured herself a place on the IBEC Global Graduates Programme where she is working as a Marketing Executive with Bord Bia in their New York Office. The IBEC Global Graduates Programme places graduates attracted by an international career, on paid work placements with leading companies over 12-18 months.
