In the midst of the ongoing debate surroundin­g the inclusion of calories on menus, we’re delighted to see so many eateries holding fast to the principle of displaying food provenance to diners. A case in point is the recently opened Chancery Grill at The Radisson Blu, where offerings include pork from Andarl Farm, fish from Wrights of Marino and Dan Barber’s heritage carrots. The Chancery’s selection of deceptivel­y simple fare includes Boyne Valley goat’s cheese with beets, toasted hazelnuts and apple balsamic from Highbank Orchard. Grill specialtie­s also include fire-roasted Dublin Bay prawns accompanie­d by Cuinneog butter, lemon, parsley and sea salt.
