THIS WEEK: LAMB KOFTAS WITH YOGURT AND CUCUMBER DRESSING

Hello everyone and I hope that you are all well. It’s great to see the longer evenings since the clocks went back, and even though it ’s still quite chilly the longer evenings herald the arrival of the warmer summer days. In terms of food and agricultur­e, lambs are arriving at great speed at the minute in farms all over the country and spring lamb is simply delicious. I received great feedback about our shoulder/ leg of lamb for Easter so this week I have decided to do another lamb dish, using minced lamb. Koftas are a nice alternativ­e to the traditiona­l burger and this recipe is simply delicious, particular­ly alongside the yogurt and cucumber dressing.

RECIPE

1 1/ 2 lb/ 700g minced lamb 2oz/ 50g breadcrumb­s

1/ 2 teaspoon of ground coriander

1/ 2 teaspoon of ground cumin

Pinch turmeric

1 red onion- chopped. 2 cloves of garlic crushed. 1 egg

2 tablespoon­s natural yoghurt

2 dessertspo­ons chopped mint.

Yoghurt Dressing:

1 cucumber- chopped finely 7 floz/ 200ml natural yoghurt

1 dessertspo­on freshly chopped mint

2 cloves crushed garlic

METHOD

Mix all ingredient­s together in a bowl until thoroughly combined.

If using wooden skewers soak them well before using or if not you can use metal skewers.

Roll the Koftas into long cylindrica­l shapes and thread them onto your desired skewers.

It is best, where at all possible to refrigerat­e the mixture for at least an hour before cooking in an attempt to harden them up as if not they can have a tendency to break before cooking.

Cooking Instructio­ns:

1. Preheat the oven to 190C/ 375F/ Gas Mark 5)

Place the koftas in the oven for 18-20 minutes until they are cooked through.

2. Alternativ­ely preheat the barbecue. Brush the Koftas with oil and cook for approximat­ely 4- 5 minutes each side on the barbecue to get a char grilled effect.

Make sure they are fully cooked through to the centre. Before ser ving.

Serve with the yogurt and cucumber dressing and some delicious greens.

Yoghurt Dressing:

Mix all together and ser ve, well chilled.
