Nel consorzio cittadino sono raggruppati tutti i produttori che producono il Pane di Matera (Igp) ancora attenendosi alle indicazioni dei padri che prevedono una selezione di grano duro rigorosamente della collina materana. e Pace (paneepace.it) con ancora il forno antico. Non si può non citare il Panificio Cifarelli, con forno a legna: nei suoi tre negozi tiene anche corsi di panificazione.
