The triumph of Fassona beef
There's a gourmet hamburger joint in Turin that serves certified high-quality Piedmontese Fassona beef. A go-to address for dinner and also a mouthwatering aperitivo. By
Piedmontese Fassona beef is a highquality, exceptionally lean meat that is renowned for its outstanding nutritional properties. It's especially suitable to eat raw, either as a base for tartare or carpaccio specialties, but also when cooked in the “tagliata” (pan- seared) version or as succulent hamburger filling. The Fassoneria, a national franchise boasting two branches in the city, serves some of the best Fassona beef in Turin. The locale's collaboration with Compral, an agricultural cooperative of breeders in the province of Cuneo, and Coalvi, the Consortium for the protection of Piedmontese beef, guarantees that the Fassoneria serves premium quality meat, from the Fassona Piedmontese breed, born and raised in the region of Piedmont. The interiors of both branches, one in the via Po district, and the other near Porta Palazzo, are minimalist, contemporary and have an industrial inspiration, with wooden tables and boiserie, enhanced by touches of red, where the walls are hung with photographs of the breeders of the cooperative; as if to say “from the producer to the consumer”. The menu celebrates the famous Piedmontese breed with hamburgers and other specialties highlighting its quality and flavour to the maximum. As far as hamburgers are concerned, the venue offers a choice of twenty options, including several that are distinctly regional, some that are more international and, surprisingly, a selection of vegetarian options. Must- trys include the Nocciolaburger, featuring Fassona beef coated with breadcrumbs and hazelnut grains, the Noburger with raw Fassona sausage and Piedmontese Toma, and the Zuccaburger, with Fassona beef, cream of pumpkin and crunchy bacon. In the evening, the locale also serves an aperitivo, featuring an array of international cocktails and an excellent selection of local wines, accompanied by small platters of Fassona- themed snacks and appetizers.
