The tri­umph of Fas­sona beef

There's a gourmet ham­burger joint in Turin that serves cer­ti­fied high-qual­ity Pied­mon­tese Fas­sona beef. A go-to ad­dress for din­ner and also a mouth­wa­ter­ing aper­i­tivo. By

Pied­mon­tese Fas­sona beef is a high­qual­ity, ex­cep­tion­ally lean meat that is renowned for its out­stand­ing nu­tri­tional prop­er­ties. It's es­pe­cially suit­able to eat raw, ei­ther as a base for tartare or carpac­cio spe­cial­ties, but also when cooked in the “tagli­ata” (pan- seared) ver­sion or as suc­cu­lent ham­burger fill­ing. The Fas­sone­ria, a na­tional franchise boast­ing two branches in the city, serves some of the best Fas­sona beef in Turin. The lo­cale's col­lab­o­ra­tion with Com­pral, an agri­cul­tural co­op­er­a­tive of breed­ers in the prov­ince of Cu­neo, and Coalvi, the Con­sor­tium for the pro­tec­tion of Pied­mon­tese beef, guar­an­tees that the Fas­sone­ria serves premium qual­ity meat, from the Fas­sona Pied­mon­tese breed, born and raised in the re­gion of Pied­mont. The in­te­ri­ors of both branches, one in the via Po district, and the other near Porta Palazzo, are min­i­mal­ist, con­tem­po­rary and have an in­dus­trial in­spi­ra­tion, with wooden ta­bles and bois­erie, en­hanced by touches of red, where the walls are hung with pho­to­graphs of the breed­ers of the co­op­er­a­tive; as if to say “from the pro­ducer to the con­sumer”. The menu cel­e­brates the fa­mous Pied­mon­tese breed with ham­burg­ers and other spe­cial­ties high­light­ing its qual­ity and flavour to the max­i­mum. As far as ham­burg­ers are con­cerned, the venue offers a choice of twenty op­tions, in­clud­ing sev­eral that are dis­tinctly re­gional, some that are more in­ter­na­tional and, sur­pris­ingly, a se­lec­tion of veg­e­tar­ian op­tions. Must- trys in­clude the Noc­ci­o­laburger, fea­tur­ing Fas­sona beef coated with bread­crumbs and hazel­nut grains, the Noburger with raw Fas­sona sausage and Pied­mon­tese Toma, and the Zuc­caburger, with Fas­sona beef, cream of pump­kin and crunchy ba­con. In the evening, the lo­cale also serves an aper­i­tivo, fea­tur­ing an ar­ray of in­ter­na­tional cock­tails and an ex­cel­lent se­lec­tion of lo­cal wines, ac­com­pa­nied by small plat­ters of Fas­sona- themed snacks and ap­pe­tiz­ers.
