But­ter­milk pan­cakes

2 cups all-pur­pose flour; 2 tbsp sugar; 1 tsp bak­ing pow­der; 1/2 tsp bak­ing soda; 1/2 tsp salt; 2 cups but­ter­milk; 1/4 cup sour cream; 2 eggs; 3 tbsp but­ter; 1 to 2 tsp oil

Whisk the flour, sugar, bak­ing pow­der, bak­ing soda and salt to­gether in a bowl. Whisk in the but­ter­milk, sour cream, eggs and melted but­ter. Al­low the bat­ter to sit for 10 min­utes. Heat oil in a non­stick skil­let over medium heat un­til shim­mer­ing. Us­ing 1/2 cup mea­sure, por­tion bat­ter into pan in 4 places. Cook un­til both sides are golden brown, 1 to 2 min­utes longer.
