Orange salad

Ingredient­s: 6 oranges; 4 tbsp white vinegar; 1 tbsp olive oil; 1 tsp sugar; 1 red onion sliced; 1/2 cupfresh mint leaves; 2 tbsp chopped cilantro; salt; 1/2 cup black olives; fresh mint leaves.

Method: With a small, sharp knife, cut peel and white membrane from oranges. Slice the oranges crosswise 1/8 to 1/4 inch thick and discard seeds. In a small bowl, mix vinegar with olive oil and sugar. In a wide, shallow bowl, gently mix orange slices, onions, slivered mint, and chopped cilantro. Pour in dressing and mix gently. Scatter olives and mint leaves over the top.
