The chef searched all over Es­to­nia look­ing for farm­ers and fish­er­men who do their work pro­duc­ing foods with re­spon­si­bil­ity and ut­most care for the en­vi­ron­ment. So, the fish comes from Lakes Peipsi and Pärnu Bay, the pork and beef from South­ern Es­to­nia, and many herbs and veg­eta­bles are picked at the Vi­hula Manor eco-farm. In ad­di­tion to lo­cal sup­pli­ers, the restau­rant sources lots of its own veg­eta­bles, herbs, meat, for­est berries and wild mush­rooms.

Meals and food here are sim­ple, fresh and sea­sonal and es­pe­cially de­light­ful in the spring and sum­mer as Niper­naadi has an in­cred­i­ble sum­mer of­fer­ing- a re­lax­ing place to gather on warm nights.
