The collaborat­ion between EMF and Callebaut has resulted in both parties winning Glufood Manufactur­ing’s The Most Innovative Food Ingredient­s Award this year for Ruby chocolate. Callebaut RB1, is the first ruby chocolate dedicated to artisans. It delivers a sparkling ruby color and intense fruitiness with fresh, sour notes as a result of meticulous selection and expert crafting of ruby cocoa beans. It allows for tremendous creativity with its broad pairing possibilit­ies, combined with a great workabilit­y for chefs. Commenting, Maurice E.
