The collaboration between EMF and Callebaut has resulted in both parties winning Glufood Manufacturing’s The Most Innovative Food Ingredients Award this year for Ruby chocolate. Callebaut RB1, is the first ruby chocolate dedicated to artisans. It delivers a sparkling ruby color and intense fruitiness with fresh, sour notes as a result of meticulous selection and expert crafting of ruby cocoa beans. It allows for tremendous creativity with its broad pairing possibilities, combined with a great workability for chefs. Commenting, Maurice E.
