Vegetables that regrow themselves

We tend to waste a lot of vegetables and herbs in the kitchen, since they’re cheap and come in bulk. And it might be easier to go to the grocery store and get them, but there is so much fun in upcycling onion roots and basil stems. You can do it indoors. It doesn’t even require soil for planting. All you need is water and sunlight. Here are some vegetables and herbs out of a longer list that you can buy once, and regrow again and again. The tops of carrots you usually chop off and throw away will grow carrot greens if you put them in a dish with a little water. Select fresh carrots. Cut off the top, 5 cm from the crown. Place the tops in a shallow saucer, cut side down. Add water so that half of the carrot top is submerged. Place the saucer on a windowsill where it will get light. Add water to the saucer as needed to keep the tops from drying out. The carrot tops will sprout in about 1-2 weeks. Carrot greens can be used as a garnish or in salads. They can also be used as centerpiec­es for a spring holiday table. Kids will have fun watching these leftovers sprout new greens. It’s a good way to learn about recycling and to show kids a carrot top contains everything it needs for a new plant to grow.

It might seem weird, but yes, you can regrow your own vegetables from kitchen leftovers and scraps!
