HALVA GIN & TONIC

"Lebanese refreshmen­t for the London layover" Fruity/floral

INGREDIENT­S

• 30ml Gin Banana (recipe follows) • 20ml Tahina Gin (recipe follows) • 3 drops orange blossom • 3 drops flower water • 120ml Schweppes tonic water • Garnish: chocolate rim • Glass: steamless wine glass Tahina Gin • 700ml gin • 150g tahina • Infuse all ingredient­s for 2 hours than distill

at 60 degrees using the rotary evaporator • Preparatio­n: 3 hrs Gin Banana • 1000ml gin • 250g ripe banana • 5g pectinex ultra sp-l • Blend all ingredient­s in a blender and rotate them for 20 minutes in centrifuge in order to clarify and remove all the banana sediments. • Preparatio­n: 30 mins

PREPARATIO­N

Put all the ingredient­s in a shaker, gently muddle the basil, shake with ice cubes and serve over a big chunk of ice.
