POTATO & SPICED MINCED LAMB PIE

When I first came to Lon­don I dis­cov­ered shep­herd’s pie, which re­minded me of this recipe that my mum used to make for us all. In­stead of an equal layer of mince and mashed potato, this uses more mashed potato and sand­wiches a thin fill­ing of spiced mince be­tween two lay­ers of it. The mash and mince are sea­soned and lightly spiced with the same in­gre­di­ents, which brings to­gether all the flavours beau­ti­fully. This rich dish needs some­thing light and zingy on the side. I like to serve it with Vil­lage Tomato Salad, which cuts through it per­fectly.
