Tra­di­tional tab­bouleh

The tra­di­tional Le­banese tab­bouleh is pre­pared on a daily ba­sis in many fam­i­lies, serv­ing as the main salad for lunch or din­ner. It is also a ‘must-have’ dish when choos­ing a mezza se­lec­tion.

IN­GRE­DI­ENTS

• ¼ cup fine bourghul (45g) • 2 cups finely chopped fresh pars­ley (80g) • ½ cup finely chopped fresh mint leaves (20g) • 1 cup finely chopped toma­toes (160g)

• 1/3 cup finely chopped spring onion Dress­ing • ¼ cup fresh lemon juice

• 1/3 cup olive oil • Cin­na­mon, black pep­per, salt to taste

PREPA­RA­TION

Wash the bourghul and leave it in warm wa­ter un­til tender (around 15 min­utes) Mix the bourghul with the rest of in­gre­di­ents in a bowl. Add the dress­ing in­gre­di­ents to the mix and stir well. Serve with white cab­bage leaves or let­tuce.
