Marina Bay Sands houses yet another of French chef and restaurate­ur Daniel Boulud’s F&B establishm­ents

FROM THE EPONYMOUS Daniel restaurant in New York City, to Bar Boulud in London, to Café Boulud in Toronto, renowned French chef and restaurate­ur Daniel Boulud has expanded his prowess and namesake with his first venture on the other side of the globe with db Bistro and Oyster Bar, located at the luxury retail and dining atrium of Marina Bay Sands.

A reinterpre­tation of the classic Parisian bistro that shares the same energy and style of the acclaimed db Bistro Moderne in Midtown Manhattan, the newest F&B establishm­ent is an exciting mix of traditiona­l French bistro cooking, contempora­ry American flavours, and a world-renowned collection of signature burgers.

Located just opposite the Sands Theatre, the bistro boasts a menu that is as bountiful as the program going up at the theatre. Expect to find freshly shucked French and American oysters alongside Maine lobsters and Alaskan king crabs, lined up next to the slew of Parisan bistro favourites, and New York-style burgers that have found pride of place on the menu. Apart from a daily selection of crudo and ceviches, diners may indulge in seafood-centric dishes, ranging from a classic shrimp cocktail, to crowdpleas­ing lobster rolls, as well as seasonal dishes, such as whole-roasted Mediterran­ean seabass and Boulud’s signature Duo of Beef.

The striking, modern-bistro aesthetics include a stylish 23-seat bar, next to an informal lounge area for casual dining, not to mention a private room with a capacity of 20 pax available for personal and business entertaini­ng. Headed by general manager Andrew Burns at the forefront, executive chef Jonathan Kinsella and pastry chef Mandy

Pan in the kitchen, db Bistro and Oyster Bar serves the usual lunch and dinner crowds, alongside weekend brunches, pre-theatre and market specials.

Indulge in the Bistro’s classics, such as the Steak Tartare, made from USDA prime sirloin, cornichon, capers, parsley and country toast, and served at the tableside and straight to your plate; as well as mains like the Tasmanian Sea Trout upon a bed of brussels sprouts, sweet corn and chanterell­e mushrooms, bathed in marmalade lemon chicken juice. Not forgetting the range of New York Burgers: The Original db Burger filled with short ribs and foie gras snuggled between parmesan buns; and The Frenchie Burger with pork belly fillings paired with caramelise­d onions, Morbier Arugula between the black pepper buns.

For dessert, there are sweeties like the Le Mandarine, an orange marmalade with basil cremeux mandarin-yogurt sorbet, the Azelia Tart, coffee cremeux with caramelise­d hazelnut Baileys ice cream, the Coffee Napoleon made from dark chocolate cream, praline variations, topped with a big scoop of Gula Melaka ice cream, and a basket of warm madeleines fresh from the oven.

db Bistro and Oyster Bar also plays host to monthly seafood promotions, whereby a delicious theme takes centre stage each month. The Bistro has previously featured Boston lobsters in their most abundant and flavourful, freshly shell-shed due to the warmer waters in the Atlantic coast of North America; and fresh ceviches marinated in citrus juice that is light and bright, making it a perfect dish for Singapore’s warm climate ‒ all of these goodies from the sea alongside the Bistro’s round-the-clock seasonal market oysters served with lemon, mignonette and cocktail sauce; the db Bistro Signature Kaluga caviar with traditiona­l condiments; and the house-made Jumbo Shrimp Cocktail and Raw Bar Trio of lobster, spicy tuna and sea trout poké for starters.
