“Short and sweet, with a punch” is Morito man­ager Jack Sapsed’s de­scrip­tion. “Man­zanilla and Fino sher­ries tend to con­tain plenty of cit­rus notes, among oth­ers, which are ac­cen­tu­ated when mixed with fresh lemon juice. The two flavours re­ally com­ple­ment each other and the ad­di­tion of su­gar bal­ances out the sharp­ness. If it’s too sharp, you can al­ways add more su­gar to the recipe."

Top tip: first and fore­most this is an apéri­tif, but it would go nicely with a few smoked al­monds, or some Padrón pep­pers to cut through the bit­ter flavours.
