“Short and sweet, with a punch” is Morito manager Jack Sapsed’s description. “Manzanilla and Fino sherries tend to contain plenty of citrus notes, among others, which are accentuated when mixed with fresh lemon juice. The two flavours really complement each other and the addition of sugar balances out the sharpness. If it’s too sharp, you can always add more sugar to the recipe."
Top tip: first and foremost this is an apéritif, but it would go nicely with a few smoked almonds, or some Padrón peppers to cut through the bitter flavours.
