• 500 ml tomato broth

• 1 tin chopped toma­toes

• 1 Tbsp tomato paste

• 1 tomato, finely diced

• 1 cu­cum­ber, finely diced

• 1 av­o­cado, cubed

• ½ tsp brown sugar

• Salt and pep­per to taste

• Co­rian­der or basil, to serve

• Lime, to serve

Bring broth, tinned tomato, and tomato paste to a boil. Al­low to cool be­fore blend­ing into a puree. Add sugar, then sea­son to taste with salt and pep­per be­fore fold­ing in cu­cum­ber and tomato; re­frig­er­ate. Add av­o­cado just be­fore serv­ing with herb of choice and lime.
