TOMATO, CO­CONUT, AND LENTIL SOUP

• 500 ml tomato broth

• 1 tin chopped toma­toes

• 1 Tbsp tomato paste

• ½ cup red lentils

• Pinch of garam masala

• ½ cup co­conut milk

• ½ tsp brown sugar

• Salt and pep­per to taste

• Co­rian­der to serve

Bring broth, tinned toma­toes, and tomato paste to boil with garam masala. Add lentils and cook un­til lentils have split. Sea­son to taste with sugar, salt, and pep­per, then add co­conut milk to warm through. Serve im­me­di­ately with co­rian­der.
