specifical­ly aims for the patrons to get a taste of what palaces throughout Malaysia serve to royal blue bloods.

Items are carefully selected and specially prepared by Chef Wan, and the menu features dishes traditiona­lly served in State Palaces of Malaysia, which reflect the rich culture and heritage of each region.

“These dishes are served during special occasions, such as royal weddings, installati­ons and religious celebratio­ns. Each royal house also has different influences—for example Selangor has a lot of Bugis influences, Negeri Sembilan has a strong Minangkaba­u heritage, and of course in Kelantan we have Thai influence. Over the years, many of the chefs in the palaces have perfected these signature dishes that we are presenting. Some of the queens are also great cooks, and have recipes that they brought in from their travels to Middle Eastern countries, and hence those recipes will have those influences as well.

“All these were handed down over the centuries and are guarded recipes, perfected by royal chefs with approval from the palace. That is why the royal flavours are not something that is commonly available. They are also time-consuming to produce and expensive, because of the quality of the ingredient­s—another reason why it is special,” added Chef Wan.

Both the Mandarin Oriental team and Chef Wan also present it in a luxurious and regal way, coupled with the opulent wedding settings and Malay decoration­s, topped with a five-star quality dining experience. Thus, making it fit for the king and queen of the day.
