‘KERBAU GULING’ A HIT
Thai delicacy sells like hot cakes after Kelantan stall goes viral
KERBAU guling literally means rolling buffalo in English. However, none of the animals were harmed in the making of this Thai delicacy, which is famous among locals here.
Every Ramadan, kerbau guling is a sought-after sweet delicacy, eaten with shaved coconut. Also known as kuih hitam or koleh hitam, it has a soft texture.
For kerbau guling seller Wan Suriana Wan Ali, 35, the delicacy was introduced here by her father 31 years ago.
Now, she is keeping his legacy alive by continuing to sell the kuih.
“People started calling it kerbau guling only recently.
“Previously, we called it kuih hitam.
“It became known as kerbau guling because the kuih is rolled in shaved coconut making it look like a buffalo taking a dip in water.
“Images of the delicacy were shared on social media, which led to Netizens calling it kerbau guling,” Wan Suriana said.
After her stall went viral, Wan Suriana said she had been seeing an increase in the number of customers, especially during Ramadan.
On normal days, Wan Suriana said she would sell about 10 trays of kerbau guling, but in Ramadan, it could be as high as 50 trays a day.
Her customers were not limited to residents here, as some came from Kota Baru, Machang and Gua Musang, as well as out of state.
Still making the delicacy using her father’s recipe, Wan Suriana said several people had asked her to share the recipe, but she would share only basic information on how to make it out of respect for her father’s hard work.
