Hoisin Man­goChicken Cab­bage Wraps

Start to fin­ish: 15 min­utes

1 head savoy or red cab­bage, leaves sep­a­rated and tough cores re­moved

3 cups cooked, cold short-grain white rice

1 ro­tis­serie or roast chicken, deboned and shred­ded

2 man­gos, juli­enned

2 red bell pep­pers, seeded and juli­enned

1 red Thai chili, seeded and minced

2 limes, quar­tered

1 cup hoisin sauce

1. If us­ing savoy cab­bage and it’s tough, steam leaves quickly (about 30 sec­onds to one minute), then cool and dry.

2. Lay cab­bage leaves on a clean sur­face and top with rice, chicken, mango, bell pep­per, and chili. Driz­zle with hoisin sauce and sea­son with lime.

Serves 6.
