Hoisin MangoChicken Cabbage Wraps
Start to finish: 15 minutes
1 head savoy or red cabbage, leaves separated and tough cores removed
3 cups cooked, cold short-grain white rice
1 rotisserie or roast chicken, deboned and shredded
2 mangos, julienned
2 red bell peppers, seeded and julienned
1 red Thai chili, seeded and minced
2 limes, quartered
1 cup hoisin sauce
1. If using savoy cabbage and it’s tough, steam leaves quickly (about 30 seconds to one minute), then cool and dry.
2. Lay cabbage leaves on a clean surface and top with rice, chicken, mango, bell pepper, and chili. Drizzle with hoisin sauce and season with lime.
