The restaurant recently turned pork-free—which means no more suckling pig, much the disappoint­ment of loyal fans. But rest assured that you will hardly notice, what with the chef’s deft, delicious new creations.

• Char siew bao, aka steamed pork buns, may be off the menu but the chicken “char siew” version is equally moreish. Ditto the baked chicken char siew pastry.

• The signature braised beef short rib is fork-tender, full of flavour and lightly scented with garlic—in short, excellent.

• Shang Palace’s durian pancake is legendary. Light dainty pancake cradling rich fresh durian, rolled and chilled. Ignore at your own loss.
