The cold capellini pasta with prawn is as delicious as it is photogenic, with avocado, ocean trout, salmon, momotaro tomato, four plump prawns and a dusting of caviar. Possibly the most substantial dish on the menu is a slowcooked (32 hours) beef ribs with apple barbecue sauce and mashed potato. The signature dessert is chocolate sphere— hot chocolate lava sauce poured over a gold-cover chocolate sphere to expose a hazelnut cream magma within.
