The trio of roasted duck, siew yoke (roasted pork) and char siew (sweet barbecued pork) is a perennial crowdpleas­er here but the appetiser section has plenty of inventive choices too, such as the Szechuan smoked fish and chilled pork knuckle slices with garlic-chilli dip. Savour excellent interpreta­tion of classics such as braised eggplant with fish in claypot, and braised sea cucumber with goose web as well as more contempora­ry renditions of spinach with crabmeat and salted egg, and stir-fried mee sua with shredded meat and seafood.
