The Dining Room features a full-course degustation menu for the gastronomically adventurous and a scaled-down verison for light eaters. Both are available with wine pairing.
The degustation menu features a modern fusion French cuisine with dishes such as cured Japanese snapper paired with crispy fish skin and served with oyster emulsion and bacalao brandade. Another notable dish is the scallop veloute with sizeable scallops gently grilled till cooked on the inside and lightly crisp on the outside, then paired with vanilla sauce and sweet cereal pearls for a unique luscious crunch. Meat lovers will enjoy the lamb loin served with a motley crew of caramelised salsify, creme of black garlic and morels.
