ON THE PASS
Much of Chef Darren Teoh’s childhood revolved around a kitchen table in a longhouse—homework and food prep were carried out on the same surface. Taking after his mother, Teoh deems family meals sacred, and insists that members of his staff share their meals at the same time. When asked to name a nostalgic food, the chef instantly answered ‘fish cutlets.’
