The first thing that greets you at Bref is a blown up portrait of the chef-patron, the inimitable Darren Chin. Meaning ‘brief’ in French, Bref has more approachable prices than Chef Chin’s other establishment, DC Restaurant. Service is prompt, professional and non-intrusive; noticing that we were first-timers, the staff provided recommendations (the Italian burrata with Mandarin-infused hollandaise, cold somen with Hokkaido bafun uni and king crab meat, and foie gras duck breast with homemade plum sauce and silky pommes purée) before we could even ask. Watching the culinary and service team interact at work is satisfying, as it’s evident that they work well together and take pride in their profession.
