Tall ceilings also give the illusion of being in a much larger space, and a grand piano takes one back to a more glamorous age. Take a deep breath before sitting down to your degustation, as you’re in for quite a journey. Chef James Won has plenty of tricks up his sleeve, from passing off aloe vera as sashimi to creating dual-flavoured risotto that tastes like a completely new dish when mixed. If you must pick just one main course, we recommend the en croute whole abalone in pâte feuilletée. Hats off the the chef for perfectly executing a traditional pithivier with a modern filling.
