Like a piece of Japan that’s been transplanted to the heart of KL Sentral, Ginza Sushimasa is one of those restaurants that’s largely built around its celebrity chef. Hiroyuki Murakami, who often engages with customers in tête-àtêtes with the help of a translator, knows his stuff, so allow him take the lead by opting for the omakase. It is a pure delight to watch the chef’s deft actions, which includes grating wasabi from scratch, expertly slicing fresh fish, sculpting sushi by hand, and wielding a blowtorch to cook a house signature, the fillet of flounder lightly seasoned with rock salt. Also try the omega-3rice horse mackerel, tangy tuna lightly brushed with yuzu, and the tamago for dessert—which, texture-wise, is comparable to butter cake.
