While the building’s strict security might be offputting to some (all guests are required to pass through an X-ray in addition to having their bags scanned), Nobu’s reputation and sky-high views still make it a popular destination. Specialising in Nikkei cuisine, a confluence of Japanese and Peruvian flavours, Nobu is big on presentation but doesn’t skimp on flavours. Our tip is to order the sashimi or tempura moriawase to sample more from each combination platter. Other signatures include the salmon new style sashimi and the black cod with miso, both of which are consistently executed well by head sushi chef ‘Chico’ Anung Dator and executive chef Philip Leong.
