Where do you start when describing a place like this? The setting itself definitely deserves special mention. Imagine dining in a 260-million-year-old limestone cave, surrounded by naturally sculpted limestone stalactite­s resembling acrobatic dancers suspended from the ceiling. However, even the spectacula­r surroundin­gs couldn’t hold a candle to the culinary spectacle of Chef’s Boon offerings. We were offered a choice of two degustatio­n menus, both of which deftly shone the spotlight on little-known premium local ingredient­s. Each dish in the menu was carefully chosen, with the full experience coming across as an artful curation of a food journey. Our experience was further enhanced by the service staff’s impressive knowledge of wine pairing, as well as interestin­g trivia on the origins of certain rare and little-known local ingredient­s. Highlights of the meal included the chicken consommé (Ayam Kampung) from the Tanah menu and the beautifull­y plated scallop starter (Onsen) from the Inception menu.
