Changing its name to Japas late last year, Chef Jeff Ramsey showcases his considerable talent by upping the ante of fusion and contemporary Japanese cuisine. Adding Spanish influences by way of dishes as well as ingredients, Ramsey has created a menu which opens up new methods of presenting traditional Japanese izakaya fare. With Small, Medium and Nibble-sized items on the a la carte menu as well as a selection from the Sashimi Bar, the one dish everyone needs to try is the Smoked Ikura Tartlette with Fromage Blanc and Yuzu. The Japanese A5 Wagyu Top Round Steak also takes top marks for succulence.
