Named after chef/owner Darren Chin, DC offers a first rate dining experience incorporating the finest global produce prepared, cooked and presented with meticulous care.
A five-course special tasting menu of DC’S starts with a daily amuse bouche of a French wild-harvest oyster with a light citrus drizzle and served on ice, followed by the freshest imported Japanese sea urchin served on a bed of cold wheat-flour noodles, made creamy with a bed of celeriac cream and truffles.
The second course features a simply delicious Japanese snow crab au gratin with champagne sabayon and decorated with a cluster of black caviar. While a dish of seasonal vegetables looks uninspiring on the menu, Darren Chin manages to convert the most ardent carnivore into a vegetarian with his artful plating. A palate cleanser of kalamansi granite and yuzu-mint yogurt that follows.
For the fifth or main course, diners can select from half a dozen options including scallops, lamb, Wagyu beef and Brittany lobster tail. Then, ending the journey is a lovely meringue hemisphere encasing berries, vanilla custard, strawberry ice cream and crumbled almond cookie.
