All-new diploma in patisserie

The All-New Diploma in Patisserie from Cilantro Culinary Academy covers all the essential theory and practical knowledge required in the pastry and bakery world. With the intention to train the students to be competitive in the international standards of patisserie, the syllabus is being created and crafted by a team of experienced pastry chefs.
Based on experiences and market feedback from hoteliers, the academy understands what employers need from a pastry chef. Maintaining the core principle of emphasising the importance of hands-on practice, this Diploma in Patisserie consists of 90% practical skills.
Students will be taught a comprehensive syllabus covering all the essential knowledge of bread making, pies, tarts, mousse, petit fours, plated dessert, cake making, creams and fillings, cake decorations, chocolate making and pull sugar. The teachers here teach the students from scratch, (meaning they do not use any pre-mix, neither do they use any ready-made items). Cilantro Culinary Academy does not emphasise on the variety of items/recipes a student can learn but believe in equipping students with the essential skills and knowledge. This is because it is this know-how that will prepare the students to be able to succeed in their career.
In learning to be a baker, it is most important for the student to learn quality skills. To collect recipes, recipe books would be a better and cheaper option, but skills are something that recipes books can’t teach.
