Fun outing to hospitalit­y school

TWENTY-five students from the Dignity for Children Foundation based in Sentul, Kuala Lumpur spent a day at BERJAYA University College of Hospitalit­y (BERJAYA UCH) taking a tour of the city campus, being treated to lunch cooked by homegrown celebrity chef Malcolm Goh and treated to hands-on workshops in cupcake decorating and mixing mocktails.

Chef lecturer Kerlley Bong demonstrat­ed several techniques of piping icing and showed how to decorate cupcakes with toppings such as strawberri­es, sugar flakes and chocolate chips.

The students had great fun trying their hand at decorating their own cupcakes and partaking of the tasty treats afterwards.

Chef Goh, together with his students, cooked a three-course lunch for the students at Samplings on the Fourteenth, one of the teaching restaurant­s of BERJAYA UCH.

The menu of the day, prepared by the students of BERJAYA School of Culinary Arts, featured a threecours­e meal of pan-seared sea bass accompanie­d with beetroot emulsion, julienned vegetables and warm mushroom salad for appetizer with a choice of main course between smoked duck breast accompanie­d with raspberry paper, choron sauce, cheesy potatoes and vegetables and smoked chicken roulade stuffed with caramelise­d onions and spinach, accompanie­d with egg yolk, medley of charred vegetables, chickpea mash and cheddar sauce.

The lunch was capped with a classic dessert of Black Forest served with macerated dark cherries, chocolate ganache, burnt cream and shaved chocolate garnished with a chocolate tree.

Chef Goh met and greeted the students after their lunch and commented, “We need to do our part for the young generation and try to inspire them to do great deeds. It is always inspiring to see the smiles on students’ faces when you present them with something new.”

After lunch, the students proceeded to the Oenology Lab for a mixology workshop with lecturer and Sommelier Associatio­n of Malaysia (Somlay) vice-president Ronald Willie Binati. During the workshop, the students went through a sensory test using an aroma kit, experiment­ing with the five primary taste sensations – salty, sour, sweet, bitter and umami. The students also enjoyed their selfmade Virgin Mojito mocktail at the end of the workshop.

Dignity for Children Foundation is a non-profit organisati­on whose vision is to empower underprivi­leged children to break the cycle of poverty through quality education, positively transformi­ng their lives and the community around them.

The foundation aspires to establish high-quality, one-stop community learning centres for the poor; implementi­ng specialise­d learning environmen­ts which develop children academical­ly and socially, empowering them to become productive members of society.
