Enjoy a magical Ramadan night

PULLMAN Putrajaya Lakeside invites all to indulge in “a feast for all your senses” beneath the dusky skies at the Clock Tower Courtyard for a memorable experience this month of Ramadan.

The Magical Ramadan Nights buffet offers over 300 local and internatio­nal delicacies, from Malaysian delights to the all-time favourites from Thailand, Hong Kong, Italy, India and the Middle East.

According to its culinary director and chef Ken Yeong, “The concept of the buffet is to give diners a satisfying culinary experience by offering a comprehens­ive combinatio­n of food that people are craving for. With a tantalisin­g array of offerings this year, guests will be able to savour a bit of everything.”

New additions have been included to the buffet line such as the enhanced Arabic station, which features one of Pullman Putrajaya Lakeside’s speciality dishes – the Big Fish. Weighing over 20kg and imported daily from Sabah, the ikan putih is perfectly cooked to a golden crisp with firm pearl-white flakes on the inside, served in bitesized fillets.

To best savour this dish, garnish the fillet with your choice of greens, from shredded cabbage, Julienne cucumbers and carrots, strips of red chilli and sliced onions to freshly plucked basil and parsley leaves.

Then, top your pickings with a drizzle of your choice of speciality sauces.

For a sweet and tangy finish, try the Chinese-based nutty peanut dip or the sambal tumis bunga kantan sauce to give it a savoury oomph with a tinge of tartness.

The real steal here, however, is the western fruit-based sauce.

It offers a delightful hint of pineapple and starfruit, which quells the heaviness of the fried fish and brings back a refreshing zest to the palate.

Try a bit of everything as each selection of sauces and garnishing lends a myriad of contrastin­g texture and distinct flavours to each bite.

The Big Fish carries with it a good melange of flavours from the array of ingredient­s carefully designed to complement the dish.

Also, new to this year’s offerings is the fusion oriental lamb chop.

According to Chef Ken, most people would balk at the sight of lamb due to its distinct gamey taste, which can be overwhelmi­ng for diners with more reserved taste buds.

Infused with Western and Asian ingredient­s such as French mustard, garlic and soy sauce, to name a few, the marinade works well in toning down the lamb’s earthy scent to a tantalisin­g contrast, without losing the natural flavour of the meat.

Seared to a light crisp on the outside, you will find a soft and tender meat with slightly pinkish hue, streaked with a trim layer of fat – a superb balance for a succulent lamb chop.

Brimming with flavours, these chops need no further embellishm­ent.

End your gastronomi­cal journey on a sweet note with a variety of local and exotic desserts such as homemade Turkish delight, baklava, luqaimat, kunafa and Turkish ice cream.

Not forgetting the ever-popular “all you can eat durian stall” where diners can gratify their insatiable appetite for the bitter-sweet, golden nugget of goodness.

Once tummies are sated and cravings satisfied, diners are invited to join in on the revelry with a host of live entertainm­ents, from magical clowns and stilt walkers to fire eaters and laser-and-lights performanc­es, bound to keep diners entertaine­d throughout the night.

Magical Ramadan Nights is available from May 27 to June 24, from 7pm to 10pm.
