TOMATO PITA BREAD Ingredient­s:

-

1. 1 kg of all-purpose flour 2. 20g of sun-dried tomato skins (cut into small pieces) 3. 10 g of yeast 4. 1 tablespoon of salt 5. 1 pinch of sugar 6. 1 tablespoon of olive oil 7. 50ml of water

Preparatio­n:

1. Mix all the ingredient­s in a large bowl until the dough

becomes elastic. 2. Knead the dough for approximat­ely 20 minutes on a floured

surface until it is no longer sticky, and smooth. 3. Rest the dough for half an hour. 4. Portion the dough into about 30 balls 5. Using a rolling pin, roll each ball of dough into a flat circle. 6. Place the flat dough on a pan with cover, and heat it for approximat­ely 30 seconds on a stove under a slow fire until the bread puffs up. Flip the bread over and heat it for another 30 seconds. 7. Remove the pita with a spatula. 8. Cut the pita into triangular pieces with scissors and spread

tomato sauce on each piece.

TOMATO SPREAD Ingredient­s:

1. 1 kg of grated fresh tomato 2. 3 onions finely chopped 3. 3 cloves of garlic finely chopped 4. 2 tablespoon­s of tomato paste 5. 1 tablespoon of salt

Preparatio­n:

1. Sauté onions and garlic on slow fire until golden brown. 2. Add in grated tomato and tomato paste and continue to

sauté until the sauce thickens. 3. Throw in the salt to heighten flavour.
