Fish and chicken combo

THERE’S a traditiona­l recipe of steamed meat cooked with salted fish. Would you have a recipe using chicken? – Jovineteh

Here’s a simple dish to try.

Steamed Salted Fish With Chicken

500g chicken, chopped into bitesized pieces 50g salted fish ( mui heong), well rinsed and cut into small pieces 2 tbsp shredded young ginger Marinade (A) 1 tsp oil 1 tbsp castor sugar Dash of pepper Marinade (B) 1 tsp oyster sauce ½ tsp sesame oil ½ tsp pepper 1 tsp Shao Xing Hua Tiau wine 1 tsp potato starch 3-4 tbsp water Mix salted fish with marinade (A) and leave aside for 10-15 minutes. Season chicken with marinade (B) for 10-15 minutes.

Combine chicken, salted fish and shredded ginger and place on a heat proof dish.

Steam over high heat for 20-25 minutes or until meat is cooked through.

Try this muffin recipe.

Banana Muffins

2 cups self-raising flour 1 tsp cinnamon powder ½ tsp baking powder ¼ tsp bicarbonat­e of soda ½ cup castor sugar 3 medium-sized mashed ripe bananas 1 egg, lightly beaten 150ml fresh milk 1 Granny Smith apple, skin peeled and diced Preheat oven to 200°C and lightly grease a 12-cup capacity muffin pan or line it with paper cases.

Sift flour, cinnamon powder, baking powder and bicarbonat­e of soda into a mixing bowl.

Add sugar and stir until well combined.

Place bananas, egg and milk into a jug. Whisk with a fork to combine.

Add banana mixture and apple to the dry ingredient­s. Gently fold all the ingredient­s together until just combined.

Spoon mixture into prepared muffin pan and bake for 12-15 minutes or until well risen.

Allow to stand for five minutes before turning out onto a wire rack. IF I do not have a kitchen scale, how do I measure out butter? – Msvalani

Unwrap butter and place it on a clean piece of plastic. Use a knife, mark a cross from corner to corner. The centre point where the cross meets is the halfway point (125g).

Using one half, repeat to get 60g and then again to get 30g. This is a rough guide.
