Johorean tradition with a decadent twist

The dish, lobster briyani gam, takes a whole day to prepare and is served only at Pince & Pints in Bangsar.

The herbs and spices used with the rice are made fresh in Johor. Accompanyi­ng the rice are potatoes, an hard-boiled egg, and acar rampai – a pickled salad of carrots, shallots, cucumbers, and chillies.

The wild-caught live lobsters used in the dish are flown in from Boston in the US state of Maine, and from Canada, twice a week.

The meticulous care taken to make this dish is evident once it arrives on the table.

The rice, gravy, and acar alone could have made an excellent meal. Each component brings a cacophony of flavours together, making a heavenly concerto.

It was so good that I wished the portions of rice, gravy, and acar were bigger.

Like any concerto, the Johorean lobster briyani gam has a star soloist, and that is the lobster. Prepared and served to perfection, the dichotomy between the humble briyani and the luxurious lobster becomes a blur in its delicious taste.

To complete the meal is the Buzzy Bandung, a rose syrup and evaporated milk preparatio­n topped with ice cream soda, the perfect refreshing thirst quencher.

These limited-edition menu additions will be available from now to July 9 with limited portions of lobster briyani gam prepared daily.
