“We are also improving our existing products in the future,” said Azmir. As an example, he noted that the McChicken burger patty now INSPIRED by his Spanish roots, celebrity chef Omar Allibhoy devised a foolproof cookie recipe bursting with flavour.
He said: “I created this recipe for Galletas de aceite – which is olive oil, raisin and lemon cookies – one day when I was searching for a good cookie that differed from traditional American flavours.
“It had to be healthier and encapsulate the taste of Spain.”
GALLETAS DE ACEITE
(Serves 4)
Ingredients 125g caster (superfine) sugar 100g brown sugar 150ml extra virgin olive oil 1 tsp vanilla extract 1 egg 100g raisins ½ tsp salt Grated zest of 1 lemon 250g self-raising flour
Method 1. In a big bowl, vigorously whisk both the sugars with the olive oil for 2 minutes. 2. Add the vanilla extract and the egg, and whisk for another 2 minutes. 3. Add the raisins, salt and lemon
zest. 4. Sift over the flour and fold with a spatula for no longer than 2 minutes. The mixture will lose its fluffiness, and get firmer the longer you fold it, so don’t overdo it. 5. Chill the dough in the fridge for
30 minutes. 6. Preheat the oven to 180°C, and line a baking sheet with parchment paper. 7. Roll the chilled dough into ping pong-sized balls, and place on the prepared baking sheet, leaving at least 10cm between each one to allow for spreading. 8. Bake for about 7 minutes if you like them soft and doughy, or 9 minutes if you prefer them crispier. – The Independent consists of 100% chicken white meat.
