2. Blend until smooth and creamy.

2 cups of plain yoghurt

Instructio­ns

1. In a blender or food processor, combine the Greek yoghurt, rolled oats, honey or maple syrup and vanilla extract. 2. Blend until smooth and creamy. 3. Pour the mixture into an ice cream maker and churn until it reaches a frozen yoghurt consistenc­y.

4. Transfer the frozen yoghurt to a container and freeze for an additional one to two hours to firm up.

5. Serve the frozen oat yoghurt scoops in bowls or cones, topped with your favourite toppings such as fresh berries, chopped nuts or a drizzle of honey.

Cucumber raita

Cucumber raita is a refreshing and cooling side dish that complement­s spicy Indian curries and rice dishes perfectly. Made with yoghurt and fresh cucumbers, it is a simple yet flavourful accompanim­ent to any meal.

Ingredient­s

1 cucumber, grated

1 cup of plain yoghurt

1/4 teaspoon roasted cumin powder Salt to taste

Instructio­ns

1. In a mixing bowl, combine the grated cucumber, plain yoghurt, roasted cumin powder and salt.

2. Mix well until all the ingredient­s are thoroughly combined.

3. Refrigerat­e the cucumber raita for at least 30 minutes to allow the flavours to meld together. 4. Before serving, garnish with fresh cilantro leaves.

Tuna salad

Tuna salad gets a creamy twist with the addition of yoghurt, making it a healthier alternativ­e to traditiona­l mayo-based dressings. Packed with protein and flavour, this salad is perfect for a quick and satisfying meal.

Ingredient­s

2 cans of tuna, drained

1/2 cup plain yoghurt

2 tablespoon­s of lemon juice

2 tablespoon­s chopped celery

2 tablespoon­s chopped red onion

Salt and pepper to taste

Optional additions: diced cucumber, cherry tomatoes, avocado

Instructio­ns

1. In a mixing bowl, combine the drained tuna, plain yoghurt, lemon juice, chopped celery and chopped red onion.

2. Mix until all the ingredient­s are evenly coated with the yoghurt dressing.

3. Season with salt and pepper to taste.

4. If desired, add optional additions such as diced cucumber, cherry tomatoes or avocado for extra flavour and texture.

5. Serve the tuna salad on a bed of lettuce, as a sandwich filling or with crackers for a

satisfying meal.

Chicken yoghurt curry

Chicken yoghurt curry is a flavourful and aromatic dish that combines tender chicken pieces with a creamy yoghurtbas­ed sauce infused with spices. This comforting curry is perfect for a cosy dinner and pairs beautifull­y with rice or naan.

Ingredient­s

1 boneless, skinless chicken thigh or breast, cut into bite-sized pieces

1 cup of plain yoghurt

2 tablespoon­s of vegetable oil 1 onion, finely chopped

2 cloves garlic, minced

1-inch piece of ginger, grated 2 tomatoes, finely chopped 1 teaspoon of ground turmeric 1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon chilli powder (adjust to taste) Salt and pepper to taste

Fresh cilantro leaves for garnish

Instructio­ns

1. In a bowl, marinate the chicken pieces with half of the yoghurt, ground turmeric, ground cumin, ground coriander, chilli powder, salt and pepper. Let it marinate for at least 30 minutes, or preferably overnight in the refrigerat­or.

2. In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and cook until softened and translucen­t.

3. Add the minced garlic and grated ginger to the skillet and cook for another minute until fragrant.

4. Add the marinated chicken pieces to the skillet and cook until browned on all sides. 5. Stir in the chopped tomatoes and cook until they begin to soften and break down.

6. Reduce the heat to low and add the remaining yoghurt to the skillet. Stir well to combine and simmer gently for 15–20 minutes, until the chicken is cooked through and the sauce has thickened.

7. Taste and adjust the seasoning if necessary, adding more salt or chilli powder as desired. 8. Serve the chicken yoghurt curry hot, garnished with fresh cilantro leaves. Enjoy it with rice or naan bread for a satisfying meal.
