WHAT IS IT… A choco­late bou­tique shop in Ise­tan The Ja­pan Store that spe­cialises in bean-to-bar choco­late us­ing beans from Viet­nam, In­done­sia, the Philip­pines and Malaysia. Mak­ing the most from the qual­ity beans is Chef Shun­suke Sae­gusa, the man behind one of Ja­pan’s most revered choco­la­ter­ies, Palet D’Or, who has crafted a range of choco­late bars, bon­bons and cakes. TRY THIS… Smooth, in­tense and com­plex, the dark choco­late bars (con­tain­ing 72 per­cent ca­cao) made here ri­val some of Europe’s best. There’s also a range of choco­late bon­bons that range from clas­sic flavours like straw­berry, pas­sion fruit and mango, to the more ex­otic Asian flavours like sakura, yuzu and Sarawak pep­per.
