WHAT IS IT… This Mel­bourne-based pho spe­cialty eatery is now avail­able at the newly-opened Ben’s In­de­pen­dent Gro­cer in IPC Shop­ping Cen­tre. The stall can be spot­ted by the brightly-lit sign dis­play­ing its name; or just fol­low the aroma of sim­mer­ing broth. Pho op­tions come in three va­ri­eties – chicken, beef and veg­e­tar­ian; while other clas­sic Viet­namese dishes are also avail­able – think stir­fried noo­dles, rice pa­per rolls, spring rolls and more. TRY THIS… Beef pho is al­ways a re­li­able op­tion. In a bowl of aro­matic beef broth, kuey teow noo­dles are added along with your choice of beef slices, brisket or beef balls, topped with scal­lions and pars­ley. Each bowl of pho comes with a side of raw bean sprouts that adds crunch to your dish. Re­mem­ber to throw in condi­ments such as gar­lic chilli oil, fish sauce and soy sauce, which are all read­ily avail­able at the counter to com­plete your bowl of pho. Wash your meal down with a cup of Viet­namese drip cof­fee – avail­able hot or cold, the cof­fee is made us­ing a Viet­namese cof­fee drip and thick­ened with sweet con­densed milk.
