Peanut But­ter Choc-Chunk Cook­ies

125g un­salted but­ter, soft­ened

• 1 cup brown sugar

•1 tsp vanilla ex­tract

• ¼ cup smooth peanut but­ter

•1 egg • ¾ cup flour

• ¼ cup self-rais­ing flour

• 200g dark choco­late, chopped

• ½ cup roasted un­salted peanuts, chopped

• 225g dark choco­late melts, melted

SALTED PEANUT PRA­LINE

¾ cup caster sugar

•¼ cup wa­ter

•½ cup un­salted peanuts

•½ tsp sea salt flakes

Pre­heat oven to 180°C. Line 2 oven trays with bak­ing pa­per. In a bowl, use an elec­tric mixer to beat but­ter, sugar and vanilla un­til creamy. Add peanut but­ter and egg, beat­ing well. Sift flours to­gether over mix­ture and com­bine. Mix in chopped choco­late chunks. Dol­lop 1 tbsp of dough onto trays about 5cm apart and flat­ten slightly. Bake 12-15 mins un­til golden brown. Al­low to cool on trays for 5 mins be­fore trans­fer­ring to a wire rack.

SALTED PEANUT PRA­LINE:

Line an oven tray with bak­ing pa­per. In a pot, stir sugar and wa­ter on low heat un­til sugar dis­solves. Then boil 6-7 mins un­til golden. Quickly stir in peanuts. Pour onto tray and sprin­kle with salt. Set aside 30 mins un­til firm. In a food pro­ces­sor, pulse salted peanut pra­line to fine crumbs. Dip cook­ies in melted choco­late. Sprin­kle with pra­line. Put aside to set.
