RED LENTILS

can eas­ily be over­cooked. Un­like brown lentils, red lentils cook within 10 mins and don’t re­quire soak­ing. Add to soups as a great thick­en­ing agent.

BROWN LENTILS

come dried or canned (pre-cooked). If us­ing dried, you will need to soak them in cold wa­ter for 30 mins be­fore cook­ing to help speed up the cook­ing process. To save time, canned lentils are ideal. Just rinse and add to sal­ads, stir-fries and also cur­ries.
