6 slices brioche, but­tered 4 rash­ers beef ba­con 4 slices Swiss cheese 2 eggs

¼ cup cream

90g but­ter, chopped

1. Top 1 slice brioche with 1 slice each ba­con and Swiss cheese. Re­peat lay­ers, ‡nish­ing with a slice of brioche. Re­peat to make a sec­ond stack.

2. In a shal­low dish, whisk eggs and cream to­gether. Sea­son to taste. Dip each stack in egg mix­ture, al­low­ing it to soak for at least 1 min each side.

3. In a large fry­ing pan, melt but­ter on medium heat un­til bub­bling. Cook sand­wiches 2-3 mins each side, un­til golden brown.

Slice in half and serve im­me­di­ately.

TIP: You can re­place brioche with thickly sliced white bread. For a bud­get op­tion, re­place ba­con with thinly sliced chicken ham.
