ULTIMATE FRENCH TOAST
Prep 10 mins (plus soaking) | Cook 6 mins | Makes 2
6 slices brioche, buttered 4 rashers beef bacon 4 slices Swiss cheese 2 eggs
¼ cup cream
90g butter, chopped
1. Top 1 slice brioche with 1 slice each bacon and Swiss cheese. Repeat layers, nishing with a slice of brioche. Repeat to make a second stack.
2. In a shallow dish, whisk eggs and cream together. Season to taste. Dip each stack in egg mixture, allowing it to soak for at least 1 min each side.
3. In a large frying pan, melt butter on medium heat until bubbling. Cook sandwiches 2-3 mins each side, until golden brown.
Slice in half and serve immediately.
TIP: You can replace brioche with thickly sliced white bread. For a budget option, replace bacon with thinly sliced chicken ham.
