Savory Rice
Today we are making a side dish that easily works with any type of meat. We all have our versions, here is my take on savory rice.
Ingredients
250 ml rice
1.5-litre hot water or vegetable stock
1-tablespoon turmeric
15ml sunflower oil
1 Onion finely chopped
2 cloves of garlic finely chopped
1 medium green pepper finely chopped
1 medium red pepper finely chopped
Instructions
Bring the stock, turmeric and rice to the boil.
Boil until soft for about 15 minutes. Strain the rice, heat oil in a pan and fry the onion and garlic until soft and translucent.
Add the peppers, chilli flakes and stirfry for a few minutes.
Add the rice and simmer on medium heat for another five minutes.
Recipe notes
You can soak your rice in cold water to help get rid of the starch. Then you don’t have to rinse it.
Add a cup of frozen mixed vegetables and cook it for a further five minutes on medium heat.
This can easily be a one-pot meal, you can fry some bacon, wors, or chicken pieces with the onions and peppers or leave it as is for a vegetarian option. I had mine with hake fillets, this dish is so versatile and fun.
