Broad bean mash

SERVES 4 PREP + COOK TIME 30 MINUTES

Shell 1kg fresh broad beans, discard pods. Boil, steam or microwave beans

until just tender; drain. Peel away grey-coloured outer shells; blend or process beans until smooth. Stir in

2 tablespoon­s hot cream. Boil, steam or

microwave 1kg coarsely chopped

potatoes until tender; drain. Mash potato in large bowl; stir in processed

bean mixture, 40g butter and 2 tablespoon­s hot cream.
