Perfect mashed potato

SERVES 4 PREP + COOK TIME 30 MINUTES

Boil, steam or microwave 1kg coarsely

chopped potatoes until tender; drain. Using the back of a wooden spoon, push potato through fine sieve into large bowl.

Stir in 40g butter and ¾ cup hot milk.

Test Kitchen tip

Using hot milk instead of cold gives a creamier mash.
