Pick Brussels sprouts from the bottom of the stem up.

• To harvest silverbeet and spinach, twist and pull off the largest outer stalks, letting the smaller inner ones grow. Don’t use a knife as the cut ends of the stems will rot. Ditto celery.

• Asian greens such as bok choy, kai laan and shungiku are cold-hardy and quick to crop, maturing from seed in as little as 55 days.
