Pick your last winter leeks, parsnips and swedes before they bolt to seed. • Pull celeriac bulbs when 8-10cm in diameter; any bigger and they develop woody cores. • The first spring stalks of rhubarb won’t be the reddest, but they will be less stringy. Treat each rhubarb plant to a shovelful of sheep pellets.
